Pink Berries

Pink berries come from the Brazilian Pepper tree (Schinus terebinthifolius) native to South America. The berries are typically steam distilled to produce an essential oil, though CO2 extraction is also used to preserve the delicate aromatic compounds.

While not as ancient in perfumery as black pepper, pink berries gained popularity in the late 20th century as perfumers sought new, innovative spicy notes. Pink berries contain various monoterpenes and sesquiterpenes, including α-pinene, β-pinene, and limonene. Their characteristic aroma is due to a complex mixture of compounds including methyl eugenol and hydroxy-3-phenyl-1-propanone, which contribute to their unique spicy-sweet profile.
