Elderflower

Elder (Sambucus nigra) is a deciduous shrub native to Europe, North Africa, and Western Asia, bearing large flat clusters of tiny cream-white flowers in late spring. The flowers are traditionally harvested by hand in June when the pollen is at its peak. In perfumery, elderflower essence can be obtained through steam distillation or solvent extraction, though yields are modest. Many perfumers also work with CO2 extracts or synthetic reconstructions to capture the full breadth of the flower's complex, fruity-floral character.

Elder has been called 'the medicine chest of the people' throughout European folk history. The ancient Celts and Germanic tribes believed the elder tree was inhabited by a protective spirit called Holda or Frau Holle, and it was considered bad luck to cut one down without asking permission. Elderflower cordial, champagne, and fritters have been beloved traditions across Europe for centuries. In recent years, elderflower has experienced a renaissance in both cocktail culture and perfumery, becoming synonymous with effortless summer elegance.

Elderflower's complex aroma profile is driven by a fascinating array of volatile compounds. The characteristic muscat-grape sweetness comes primarily from linalool and hotrienol (a monoterpene diol), while rose oxide contributes subtle rosy-green facets. Nonanal and other aldehydes provide the fresh, green-waxy dimension. The honey-like warmth is attributed to phenylacetic acid and its esters. This rich chemical palette is what makes elderflower so multifaceted, reading simultaneously as floral, fruity, and honeyed.
