The flower is the national symbol of Malaysia and South Korea, and plays a central role in Hindu worship as an offering to the goddess Kali. In the Caribbean and West Africa, hibiscus tea (known as bissap, sorrel, or agua de jamaica) has been a beloved drink for centuries, connecting the flower to hospitality and celebration across cultures.
Chemistry and Molecular Structure
The aromatic profile of hibiscus is built on organic acids, anthocyanins, and volatile terpenes. The characteristic tartness comes from hibiscic acid, citric acid, and malic acid concentrated in the calyces. Anthocyanins like delphinidin and cyanidin give both the deep red color and contribute to the berry-like scent impression.
